Ok,. here is my blog topic for everyone to answer.
If your dear blog friends were coming for dinner, what would you fix them? serve lots of choices, because every blogger that I know is picky! lets fix them up with a smorgasbord!
on my menu is:
~antipasta tray with cheeses, salami, pepperoncinis, pickles, olives, roasted red peppers, etc.
~hot baguette with garlic butter
~fried goat cheese (YUM!)
~stuffed mushrooms with lemon butter sauce
~grilled tuna steak (coriander and black pepper seared )
~assorted veggie kebabs. my fav is squash, zucc, peppers, corn, mushrooms and carrots with rosemary speared as well.
~twice baked cheddar/red pepper flake baked potatoes
~mojitos and margaritas
~creme brulee for dessert, freshly fired by chef wes :)
who is coming for dinner?
ok, what are you making when we all come to your house. no smart answers like pizza - if it HAS to be take out, describe your favorite menu.

Wow, I'd definitely come to your dinner.
I think I would do fajitas. Pinto beans, monterey jack, sour cream, salsa, guacamole, grilled peppers, onion, mushrooms, zucchini and tofu on the side. Margaritas and chips to start with. Tequila shots for those who would do them with me.

vegetarian lasagna, garlic
bread (homemade) greek salad,
antioxidant coolers,
creme brule (my most fave desert)
and lots of happy music.

i cannot cook so i would have to have dinner catered... not sure from where... maybe macaroni grill.

I would make macaroni and cheese in a crockpot, sweet potatoes, and chicken on the foreman grill. For the veggie-tarians, maybe some, ummm, I dunno...salad?
Oh, and for dessert, chocolate cake.
Yeah, kinda boring, but hey, gotta do what you know, right?

Dinner @ Kim's Mexican Style
I would start off with some chips and salsa, 7 layer mexican dip and some cheese dip.
Drinks: Margerita's and Corona's.
Dinner: Mexican Lasagne (meatless)served with corn bread.
Dessert: Margerita pie, Mexican Panque Con Creme de Nuez (nut bread) and those mexican wedding day cakes, but they are cookies.

Mexican Lasagna
1/2 box lasagna noodles
1 can (1 lb) fatfree vegetarian refried beans
1 cup chunky salsa (any degree of heat you prefer)
1 cup fatfree or 1% fat cottage cheese
1 cup shredded fatfree (or low fat if desired) cheddar cheese
Cook noodles according to package directions. Rinse and drain.
In a small saucepan, mix beans and salsa and heat over a medium flame
until runny (helps to spread the mixture). Place a small amount of the
bean mixture in the bottom of a square 8 or 9 inch baking dish. Layer
four or five lasagna noodles over the dish (cut off extra length of noodle and
save for the next noodle layer). Spread 1/2 of the bean/salsa mix on top
of noodles then top with 1/2 the cottage cheese and some of the cheddar.
Top with more noodles then the remaining bean/salsa mix and cottage cheese.
top with more cheddar and remaining noodles. Top with a little more cheddar.
Bake in microwave at medium-high for 10 minutes (uncovered) or in oven
for 30 minutes at 350 degrees (or until hot and bubbly).
Another way:
6 eggs
2 tablespoons water
1/2 teaspoon chili powder
1/4 teaspoon ground cumin
5 large (10-inch) flour tortillas 1 can (15 oz.) refried beans with green chilies, divided
2 cups (8 oz.) shredded reduced-fat Cheddar cheese, divided
1/2 cup part-skim ricotta cheese
1 jar (12 oz.) salsa, divided
1 cup shredded zucchini
Cilantro sprigs, optional
In medium bowl, beat together eggs, water, chili powder and curnin until well blended. In 10-inch skillet over medium heat, melt butter. Pour in egg mixture. Cover and cook over low heat until eggs are almost set, about 7 to 9 minutes. Set aside.
Place a tortilla in bottom of lightly greased 9 or 10-inch springform pan. Spread with 1/2 of the beans and 1 cup of the Cheddar cheese. Top with another tortilla, ricotta cheese, and 1/2 cup of the salsa. Top with another tortilla, the reserved cooked egg and 1/2 cup of the salsa. Top with another tortilla, the remaining beans, the zucchini, and 1/2 cup of the Cheddar cheese. Top with the remaining tortilla.
Bake in preheated 350°F oven 20 minutes. Remove from oven and top with remaining salsa and Cheddar cheese. Bake 10 minutes more. Let stand 5 to 10 minutes. Remove rim of pan and cut into wedges to serve. Garnish with cilantro sprigs, if desired.

hmmm... no seafood for me, but I'd still come!
as for me, I'd wait til winter and serve up a hearty meal.
gorgonzola stuffed mushrooms and goat cheese/pine nut puffs with balsamic glaze as an appetizer.
I would make my gorgonzola/pear/candied pecan salad with raspberry vinagrette for folks to have while we get settled at the table.
I'm torn between making my carbonara or chicken cordon blue. probably the chicken, cause I can stuff/prep them earlier and be free to mingle during party time. as for sides... garlic bread for the pasta, and maybe asparagus and rosmary/garlic potatoes with the chicken? or maybe I'd do a pasta bake. no no.. pasta bake goes with my veal scallopini roll-ups.
def veggies and a potato.
drinks would vary from wines to martinis... (another reason for me to wait til fall.. can't drink til the baby is out of me!)
as for dessert.... I'd make meriengue (sp?) shells topped with strawberries and a chocolate ganache.

your menu is yum and i'd like an extra portion of twice baked cheddar/red pepper flake baked potatoes.
if you were coming in summer, i'd make you traditional stuffed tomatoes (gemista), a zucchini quiche and eggplant salad. And ice cream.
if it was winter i'd make you trahana soup (it's a special pasta), ovenbaked chestnuts-potatoes-wild mushrooms or maybe a pumpkin risotto with saffron. And chocolate cheesecake.
